Dark Chocolate Chip Cookies...



Did anyone watch The Bachelor this season?

Anyone?

I was sucked into it. I usually skip a few seasons, then end up tuning in and become addicted.

At first I was excited that Juan Pablo, aka JP, was chosen. Then, after a few episodes, I was a little disenchanted with him. 

Here is my recap of this seasons Bachelor, because you totally need another recap:

1. Juan Pablo charms the ladies. 

2. Juan Pablo kisses the ladies... then uses his daughter as an excuse to not kiss the ladies. 

3. Juan Pablo says: "Lookatme, lookatme, lookatme" many times, as well as "What are you thinking," "It's okay," "I like you," "Aye, aye, aye."

4. Juan Pablo sends home many women, including Renee, my favorite. 

5. Sharleen leaves because she is struggling with her feelings for JP and thinks that they have no "cerebral connection" between the two of them. Yeah... she basically called him a dunce.  

6. Andi leaves after the Fantasy Suite when JP is insincere toward her... and he is totally oblivious why she feels that way. 

7. The last two women, Claire and Nikki, visit Juan Pablo's family, who inform them both that JP can be rude and difficult... and they both seem okay with that.

8. Juan Pablo makes a rude comment, off mic, to Claire... that she won't say out loud... yet, she stays for the final rose ceremony, in hopes she will be proposed to.

9. Nikki still can't get JP to say "I love you," to her and cries in her hotel sweet, the night before the final rose ceremony.

10. Juan Pablo totally disses Claire and tells her she is not the one, even thought he has lead her to believe otherwise. Claire then gives him a piece of her mind. You go girl!

11. Juan Pablo chooses Nikki. Although, he doesn't give her a ring, but the last rose. Can you say akward!?!

And... the end. Well, except for the after show, where it got just a tad bit uncomfortable, when JP still wouldn't give us the goods on whether or not he loves Nikki.

Geez... I needed some chocolate after all that...

... so I made these cookies. You are welcome.

Dark Chocolate Chip Cookies
  • 1-3/4 Cups Flour
  • 1/3 Cup Cocoa
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Baking Powder
  • 3/4 Cups Granulated Sugar
  • 1/2 Cup Butter (1 Stick), Softened and Divided
  • 2 Whole Eggs, Room Temperature
  • 1 Teaspoon Pure Vanilla Extract
  • 2- 10oz. Bags of Dark Chocolate Morsels
Preheat the oven to 350 degrees (F).

Line cookie sheets with parchment paper for easy clean-up; set aside.

In a double boiler, melt half of the butter with one bag of the dark chocolate morsels, stirring to keep from burning. When done take off the heat and set aside.

In a small bowl, measure the flour, cocoa, salt, and powder. Whisk to combine; set aside. In a medium or large bowl, cream the sugar and other half of the butter. Add the eggs, one at a time, just until combined. Scrape down the sides of the bowl with a spatula as you go. Add the vanilla and the melted dark chocolate mixture that was set aside previously. 

Mix the flour mixture into the wet ingredients a little at a time to form the cookie dough. Finally, fold in the second bag of dark chocolate morsels. 

Form the dough into 1-1/2 to 2 inch balls and bake on the parchment lined sheets two inches apart for 12-14 minutes, or until the cookies are set. Cool a few minutes, then transfer to cooling racks to cool completely. Makes 28-30 cookies.

Chocolate Hazelnut Chewies...



It's that time of year again!

You know......

...... when the baking extravaganza begins!

At least in my house anyway.

I told my husband that I was not going to bake as many goodies as I did last year. Just enough to hand out to co-workers, friends, and neighbors... with some left over for us.

Not too sure if that's going to happen, but it's worth a try! Got to ease up on that Christmas time weight gain...... ya hear me?

Anyway, these cookies are perfect for cookie swaps. I'll give you three reasons why:

1.) Chewy on the inside
2.) Chocolatey with a hint of hazelnut
3.) Addictive

What great reasons to make these a part of your baking regimen this Christmas!


Chocolate Hazelnut Chewies

  • 1-3/4 Cups Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Cup Cocoa Powder
  • 1/2 Cup Butter Shortening
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Brown Sugar, Packed
  • 1 Whole Egg, Room Temperature
  • 3/4 Cup Chocolate Hazelnut Spread, Like Nutella
  • 1-1/2 Teaspoons Pure Vanilla Extract
  • 3 Tablespoons Brewed Coffee, Cooled
Preheat the oven to 350 degrees (F).

Line cookie sheets with parchment paper for easy clean-up.

In a small bowl combine the flour, soda, and cocoa powder; whisk to combine, then set aside. In a large bowl, cream the shortening, granulated and brown sugars for a few minutes. Add the egg and combine. Scrape down the sides of the bowl, then add in the chocolate hazelnut spread. Lastly, add the vanilla and coffee and combine. 

Using a tablespoon or so, roll the dough into 1-1/2 inch balls. Place onto the cookie sheets about 2 inches apart. Bake for 9 minutes or until the chewies are done. Allow to cool a few minutes, then remove the chewies to a cooling rack to cool completely. Makes around 28 chewies.

Chocolate Cherry Chunk Scones...




We need to talk.

About a particular show.

It's called Downton Abbey, my friends.

AKA: THE BEST PERIOD PIECE TELEVISION SERIES EVAAA!

I'm a sucker for this genre of series, a major sucker...... and my family just doesn't get it. Not one of them! Scandalous, right?

My youngest really doesn't pay attention to it, my oldest doesn't understand why I would watch something so boring, and my husband just makes fun of the series.

In making fun, I mean he uses his best English accent and continues to call it Downtown Abbey... which I know he knows what it's called, but continues to do so, because he knows it ANNOYS the HECK out of me!

But I just ignore it, curl up with my tea and cookies (biscuits, as the English say) or some scones and enjoy the wittiness of Grandmama, the forward moving and kind Isobel Crawley, or even the privileged Crawley daughter Mary. I can't forget to mention Mrs. Patmore. She totally rocks it in the kitchen!

Some may call me obsessed...... but, I think of it as being enthusiastically devoted.

I did almost buy a Downton Abbey 2013 Calendar and I'm totally thinking about ordering a T-shirt or tote. I just can't decide which one I like best. Evidence of my devotion.

So, if you are as enthusiastically devoted to Downton Abbey as I am, make these scones to accompany your tea while you watch.

I mean, you demurely drink tea while watching, right? Why do I even need to ask!?!

...... Of course you do!


Chocolate Cherry Chunk Scones

  • 2 1/2 Cups Flour
  • 1/2 Cup Cocoa
  • 1 Teaspoon Baking Soda
  • 1 Cup (2 Sticks) Salted Butter, Softened
  • 3/4 Cup Granulated Sugar
  • 2 Whole Eggs, Room Temperature
  • 2 Tablespoons Cooled Prepared Coffee
  • 1 1/2 Teaspoons Pure Vanilla Extract
  • 6 oz. Dried Cherries
  • 1 Cup Dark Chocolate Chunks
Heat the oven to 350 degrees (F).

In a medium sized bowl, sift the flour, cocoa, and soda together. Set aside.

In a large bowl, cream the sugar and butter until light and fluffy. Add the eggs and beat just until combined. Next, beat in the coffee and vanilla. 

Gradually add the flour mixture until it is incorporated. Stir in the cranberries and the dark chocolate chunks. It will be a very dense mixture. Drop by tablespoonful onto parchment lined cookie sheets, 2 inches apart. Bake 12-14 minutes, or until the scones are set. 

Cool a few minutes before transferring the scones to a wire rack to cool completely. Makes about 2 1/2 dozen scones. Store in an airtight container.

Chocolate Trail Mix Lollipops...




Since moving from Hawaii to Oregon this past summer, we've settled in pretty well.

There still are a few things that we're getting used to.

Let me rattle them off to you...


  • Constantly seeing men & women wearing camouflage. 
  • Watching my neighbor pull into his driveway with his latest kill... a dead buck in his truck bed. 
  • Watching my neighbor hose down the back of his truck bed with the dead buck in the truck bed.
  • Realizing they have a Timber Festival (you know, with lumberjack competitions)..... and looking forward to taking the family.
  • Seeing deer roam. Like, everywhere. We really do get over-excited when we see them. Too excited.
  • Small town life....... it's quite nice, but can be a little restrictive in the way of shopping.
  • The rain.
  • The rain.
  • The rain.
  • Did I mention the rain?

Oregon is beautiful, and we definitely look forward to exploring more once the weather gets better. Sunshine is missed. Not gonna lie. 

I am grateful, however, that we, my girls especially, get to experience living in different states and seeing how people live in those states. Of course, for the most part, as Americans we share similarities, but there are some very unique differences. 

Something else I'm grateful for......

...... Chocolate...... and Trail Mix...... together.

A fabulous marriage, if you ask me. 

Salty and sweet = perfection

And they are on a lollipop stick. That makes them even more special. It really, truly does. 



Chocolate Trail Mix Lollipops

  • 1 Cup Dark Chocolate Morsels or Chunks
  • 1 Cup Milk Chocolate Morsels
  • Trail Mix
  • Lollipop Sticks
Prep your work area by pre-cutting a few large pieces of parchment paper and lay them down on the counter. Place the lollipop sticks and trail mix near by.

In a double boiler, melt the dark and milk chocolate until smooth. Carefully remove the heatproof bowl from the double boiler. Working quickly and one lollipop at a time, drop the chocolate by tablespoonful and shape into a circle using the back of the spoon. 

Take a lollipop stick and twirl it at the base of the circle to coat; leave it at the base of the chocolate circle. Place a small drop of the melted chocolate over the area where the lollipop stick is inserted in the base of the chocolate circle, just to secure. 

Sprinkle some trail mix over the chocolate. Allow about 2 hours for the lollipops to dry and set. Store covered. It's best to eat these within a few days of making them. Makes around 16 lollipops.

Chocolate Granola Squares...




Do I have a simple treat for you!

Only four ingredients....... FOUR, people! It can't get any easier than this.

I heart granola, but it can get a little boring eating your typical granola and yogurt. So, that's why I thought I'd dress it up a bit.

To do that, I mixed it with some melted chocolate.... walnuts.... coconut, too.

Now, I consider this treat somewhat healthy....... the granola...... am I right? Of course I am. Yes, it has some chocolate in it, but who cares right!?! It's all about moderation.

Want to make it even healthier? Use dark chocolate instead of the semi-sweet chocolate I used.

Please say you'll try this... I'm telling you, it will hit the spot...


Chocolate Granola Squares

  • 2 Cups Granola Mix (I used a Chocolate and Berry Mix)
  • 1/4 Cup Chopped Walnuts
  • 1/4 Cup Shredded Coconut
  • 1 Cup Semi-Sweet Chocolate Morsels 
Line an 8x8 square pan with parchment paper. Set aside.

In a medium bowl, mix together the granola, walnuts, and coconut. Break up any large clusters of granola. 

In a heat proof bowl, melt the morsels in the microwave in two 30 second intervals, stirring after each interval. Once the morsels are melted and smooth, pour over the granola mixture and stir until well combined.

Spray a spatula with cooking spray (it will be sticky) and transfer the chocolate granola mix into the 8x8 pan, pressing it to cover the inside of the pan. Chill in the refrigerator for up to an hour or until set. Remove the chilled chocolate granola and cut into squares or break into pieces. Keep in the refrigerator to keep from melting.

Chocolate Peanut Butter Bars...




I know I've been posting a lot of sweets, but really, I positively cannot help it.

It's Christmastime, people.

I'm a baking fool this time of year.

I love baking anyway, but Christmas baking is so much fun! It wouldn't be Christmas without all the goodies we have in the house or without delivering some to those we know.

The down side of this...... having sweets in the house pretty much THE ENTIRE MONTH OF DECEMBER!!!

Why?

There goes my diet. Yep, the one I've been on, oh... since after I gave birth to my 13 year old.

Although, I am doing pretty well as of this week. I've learned not to deprive myself. That's the key, because if I do, I'll end up scarfing my face full of more than just Christmas cheer.

Capeesh?

 A sugar overload. Not good.

So, I've decided a small sweet a day will be perfect. I get my fix, without over indulging. A win/win in my book.

Chocolate Peanut Butter Bars

  • 1 Stick of Butter
  • 1 Sleeve Graham Crackers (About 2 Cups), Finely Crushed
  • 1 Cup Milk Chocolate Morsels
  • 1 Cup Peanut Butter Morsels
  • 1/4 Cup Peanuts, Finely Chopped*
  • 1/4 Cup Pecans, Finely Chopped (Optional)*
  • 1 Can (14 oz) Sweetened Condensed Milk
* Add the peanuts and/or the pecans to your taste.

Pre-heat the oven to 325 degrees (F).

Place the butter in a glass 13x9 baking dish and set in the oven to melt, watching carefully. Once the butter is melted, carefully remove it from the oven and layer the crushed graham crackers, morsels, and nuts in that order. Drizzle the milk over the layers, making sure to saturate the ingredients well. Bake for 18-20 minutes, or until very bubbly and somewhat browned on top. Remove from the oven and allow the bars to cool and set completely (3-4 hours). It will look a little gooey, until the bars set. Cut into squares or triangles. Makes about 15 squares or 30 triangles, depending on how large the bars are cut.

Chocolate Fondue Truffles...




So, what to do with left-over chocolate fondue?

The day after placing the chocolate fondue in the refrigerator, it solidified. I was scooping it out into cups to microwave for my girlies to dip fruit into.

Not as much fun as eating it from a fondue pot.... and honestly, I really didn't want to break it out again.

Sorry, but sometimes a girl just doesn't want to have to do the dishes.

Anyway, I had a brilliant idea! Why not roll the chilled fondue into truffles? I mean... does it really matter how I get my chocolate fondue fix.....

..... um, not really.

So, to make them even more indulgent, I decided to roll my fondue truffles in chopped macadamia nuts, chopped Reece's Pieces Baking Chips, and Toll House Mini Chocolate Morsels. Anything goes here, really.

Coconut would be fab, but I seem to be the only coconut lover in my household... and I didn't want to seem too selfish with these babies.

If, at anytime, you have left-over chocolate fondue... don't throw it out (gasp!)... chill it and make some decadent truffles. It's totally worth it.


Chocolate Fondue Truffles

  • Chilled, Left Over Chocolate Fondue
  • Chopped Nuts, Baking Morsels, and/or Candies of Your Choice
Using a melon baller, scoop the chilled fondue and roll into 1 inch truffles. Roll the truffles in the nuts, morsels, and/or candies you have chosen, covering completely. Chill in the refrigerator for a few hours to overnight. Remove just before serving.

Brownie Petit Fours and The Giveaway Winner...



I love little treats. They are so much fun! So, I decided to make some cute little brownie petit fours.

They are perfect for Valentine's Day! Just how cute are these sprinkles!?!

For the frosting I used my Chocolaty Chocolate Frosting, only I cut the recipe in half, since I only needed a little bit for the petit fours.

These treats would be perfect for a desert bar...... or send them as a secret admirer gift. Either way, people are going to love ya for making them...... seriously, they will.

I bet you're just dying to know who won the Valentine Care Package...... am I right? Okay, here we go!

Brownie Petit Fours

  • 1 Box Brownie Mix, Plus Ingredients Listed To Make Brownies
  • 12 Ounces (Weight) Semi-Sweet Chocolate Morsels
  • 1/2 Pint Heavy Whipping Cream 
  • Chocolate Frosting
  • Various Valentine Sprinkles
Preheat the oven to 350 degrees (F).

Line a 13 x 9 baking dish with parchment paper with over hang on two opposite sides for easy removal. Mix and bake the brownies according to the instructions on the back of the box. Once the brownies are done, completely cool them in the pan, then remove and cut into 1-inch squares. 

To make the chocolate ganache, heat the heavy cream just until boiling, in a small heavy duty saucepan. Remove from the heat and pour in the chocolate morsels. Allow them to sit in the heated cream for 2 minutes, then stir until combined and smooth. Allow the chocolate ganache to set up for a few minutes. In the meantime, place parchment paper under cooling racks and arrange the brownies on top of the cooling racks.

Next, spoon the chocolate ganache over the brownies to coat them. Let the excess drip off onto the parchment paper placed under the cooling racks. Allow them to dry for about an hour, then carefully transfer the petit fours to a lined cookie sheet to set in the refrigerator for another hour or so. Using a decorative piping tip of your choice inserted at the end of a piping bag, pipe chocolate frosting on each petit four and top with sprinkles.  Store the petit fours covered in the refrigerator for 2 or 3 days. Place in candy liners for presentation. Makes 65 brownie petit fours.

Peppermint Hot Chocolate...

 


I hope everyone has started off December wonderfully!

My family has returned home and we are getting back into the swing of our usual routine again.

Now I can start my holiday baking!

I love this time of year...... even thought it takes a little getting used to in a hot tropical climate.

Although, it is warm where I live, I still like having a nice warm mug of hot chocolate every once in a while in the evening. It has winter written all over it.

My kids love it too!

The best kind of hot chocolate is the homemade kind. I kid you not. It's so much creamier and chocolaty and richer.

Please say you'll try it...

... it really is worth all the calories.

Peppermint Hot Chocolate

  • 1-1/2 Cups Whole Milk
  • 1/2 Cup Half and Half
  • 6 Ounces of Good Quality Milk Chocolate (Do Not Use Bittersweet)
  • 1 Teaspoon Pure Vanilla Extract
  • 1 Teaspoon Peppermint Extract
  • Whipped Cream For Garnish
Begin by heating the whole milk and half and half on low heat in a heavy duty saucepan. While heating, chop the milk chocolate. It doesn't need to be finely chopped, but small enough that it will melt easily. Once the milk mixture begins to steam, add the chopped milk chocolate and stir or whisk until completely melted and incorporated. Finally, add the vanilla and peppermint extracts and stir. Ladle into mugs and dollop whipped cream on top. Serve with a peppermint stick for fun. Makes 3 small servings or 2 large servings.

Chocolate Mint Cookie Cupcakes with Mint Buttercream...



While grocery shopping the other day, I saw these Mint Creme Middles. I snatched them right up with an idea to make some cupcakes. I debated whether to make chocolate cupcakes from scratch or just buy a cake mix. The latter won out.

I know it's better to bake from scratch...... blah, blah, blah, blah...... blah.

But, I just didn't feel like it. Boxed cake mixes are so much easier. Great for when you're in a pinch for time. I did make the frosting from scratch, though. I'm pretty sure that counteracts my slacker-ness in using a boxed mix...... right?

Anyway, I like adding something new or unexpected to a boxed mix. Like these Mint Creme Middles I picked up. It's fun to find a surprise in your cupcake every once in a while!


Chocolate Mint Cookie Cupcakes

  • 1 Box of Devils Food Cake (1lb- 2.25 Oz.), Plus Ingredients Listed To Make The Cake
  • 2 Packages of  Keebler Mint Creme Middles ( 9.5 Oz.)
Preheat oven to 350 degrees (F.)

Make the cake batter according to the directions on the back of the box. Fill two pre-lined muffin/cupcake pans with half of the batter, then place a mint creme cookie over the batter. Distribute the rest of the batter evenly, over the mint cremes. Bake according to the instructions. Cool completely and frost with Mint Buttercream (recipe below). Garnish with whole or crushed mint cremes. Makes 24 cupcakes. 


Mint Buttercream

  • 1/2 Cup Salted Butter
  • 1 Pound Powdered Sugar
  • 4 Tablespoons Half and Half Or Whole Milk
  • 1/2 Teaspoon Pure Mint Extract
  • 2-3 Drops of Green Liquid Or Gel Food Coloring (Optional)
In a large bowl, cream the butter. Add half of the powdered sugar and 2 tablespoons of the half and half and combine. Add the rest of the powdered sugar and half and half. Add in the mint extract and mix until
well combined. Lastly, mix in the food coloring, if using. Frosts 24 cupcakes.

Orange Chocolate Sauce...

 


I love chocolate sauce... and here's why:

1. It tastes good. Obvi.

2. It's versatile... you can put it on almost anything sweet... even some savory foods.

3. It's a great food gift... just whip it up, package it in some cute canning jars with labels, and give em' away.

4. It tastes good. Ooops, I already said that didn't I?

Well, although I love chocolate sauce, I had never made it before. I would just buy it at the store if I ever needed it. Let me tell ya... all that is gonna change. Here's why:

1. It's easy to make.

2. Anything from scratch is totally better than store bought... and yes, I do cut corners a lot by buying store bought..... no shame in that. But if you ever have the chance to make it yourself... I suggest it. It's nice to feel like June Cleaver or Donna Reed every once in a while.

3. You can adjust the flavorings to your taste... customize... I'm all about that!

4. Did I mention it's easy?....... Well, it is.... fo' shizzle (sorry there's my Snoop Dogginess coming out again).

So, please make this chocolate sauce. As you do, throw on some pearls, high heels, and an apron. Rock that 1950's housewife look..... it's actually kinda fun. 


Orange Chocolate Sauce
  • 1 bag (11.5 oz) of Milk Chocolate Chips
  • 2 Tablespoons of Butter, Softened
  • 1 Teaspoon of Pure Vanilla Extract
  • 1/2 Teaspoon of Orange Extract
  • 1/2 Pint of Heavy Whipping Cream 
In a small bowl, place the chocolate chips, butter, vanilla and orange extracts; set aside. Heat the cream in a saucepan, just until boiling. Remove from the heat and pour over the ingredients that have been set aside. Let it sit for about 15-30 seconds, then whisk until smooth. Pour the chocolate sauce in an airtight container or jar(s) and store in the refrigerator. The sauce will thicken up. To warm, microwave at 10 second intervals. Serve over ice cream, pancakes, pound cake, or whatever your heart desires. Makes 2 cups.

Chocolate Fridge Cake...



OK... I'm just gonna lay it all out there...... I am super excited about the upcoming Royal Wedding! I will be one of THOSE people who'll stay up and watch the entire event on TV. Of course it helps that I live in a time zone where Wills and Kate's wedding will air around 10pm... a major score for me... no setting my alarm clock so I can get up at the crack of dawn!

For weeks I've been thinking about posting a recipe in regards to their wedding cake. If you haven't already heard, the main wedding cake is a traditional English Fruit Cake...... um, yeah...... I don't like fruit cake...

... at all.

No need to worry though, Prince William is having a groom's cake. Then I found out it's going to be an unbaked chocolate and McVitie's biscuit cake. Biscuits in England are what we call cookies here in America, by the way.

Cookies and chocolate, plus it's not baked... oh yeah... I'm lovin' this!

So, I've done a little research and found that one name this cake goes by is Chocolate Fridge Cake. Jamie Oliver, Nigella Lawson, and the King Arthur Flour blog have recipes for this sort of cake. All the recipes look great. The first two have way too many nuts and fruit in it for my taste, but they are more traditional, which I like. As for the third recipe, it doesn't have the abundance of ingredients, like the first two...... I like that. So, I decided to adapt my cake from all three recipes.

I must be super lucky people, because I found some McVitie's Rich Tea Biscuits at my local grocery store. They were with the specialty food items such as German and English brands. If you can't find them, they taste almost exactly like an animal cracker. Those could definitely be used instead of the tea biscuits.

Before I bore you too long with all my research details and all the attempts it took to develop this cake...... not to mention my excitement for The Royal Wedding, I'd better just tell you how to make this oh so yummy cake.

So, here's an American take on a British dessert...


Chocolate Fridge Cake
  • 6 oz. Milk Chocolate Chips
  • 6 oz. Dark Chocolate Chips
  • 2 Tablespoons of Butter
  • 1 Tablespoon of Honey
  • 1 Teaspoon of Pure Vanilla Extract
  • 1/2 Pint of Heavy Whipping Cream
  • 12 McVitie's Biscuits, 2 per Ramekin
  • 1/2 Cup of Macadamia Nuts, Divided
  • 3 Tablespoons of Cocoa, for Dusting
In a double boiler, melt the chocolate chips, butter, honey, vanilla and cream until smooth. Remove from the heat and set aside. In six 7 oz. ramekins, place one biscuit at the bottom of each. Next, divide and sprinkle the macadamia nuts over the biscuits. Pour the melted chocolate mixture into the ramekins, dividing evenly. Place one more biscuit on top of the chocolate mixture. Chill the ramekins in the refrigerator overnight. Before serving, dust the tops with cocoa powder. Makes 6 servings.
