Thin Mint Cookie Popcorn...




If you love Girl Scout Cookies as much as I do, and popcorn, you'll love this tasty treat I've whipped up.

It takes absolutely no time at all. 

The local Girl Scout Troop were selling their famous cookies right outside the grocery store where I like to shop. How could I pass them up? There was no way I was NOT going to buy some of that deliciousness. 


Our family favorites are Thin Mints and Samoas. When we get these cookies in the house they are gone within days. 




I love throwing together recipes using popcorn as an ingredient, because it is so versatile. You can pretty much add anything to it and it will turn out fabulous!

When making this popcorn treat, I did use green gel coloring to color the white chocolate morsels, but it really didn't show up once I mixed in the crushed cookies, so I have it in the recipe as an optional ingredient.

Dress up your popcorn with some Thin Mints...... do it!


Thin Mint Cookie Popcorn

  • 10 Cups White Popcorn, Popped
  • 1 (12 oz) Bag of White Chocolate Morsels
  • 1 Sleeve of Girl Scout Thin Mint Cookies
  • Green Gel Coloring (Optional)
Place the popcorn into a very large bowl (making sure there are no kernels) and line a baking sheet with parchment paper, then set both aside.

Crush the cookies in a large zip lock bag, then set aside. In a double boiler, melt the morsels. Cool the melted morsels a few minutes. If using gel coloring, add a small amount of the gel coloring and stir until incorporated. 

Working quickly, pour the melted morsels over the popcorn, stirring to coat. Add the crushed cookies, also stirring to coat. Pour the popcorn mixture onto the prepared baking sheet, as evenly as possible and set aside to set. If you are in a rush, you can place the popcorn in the refrigerator to set. Break apart into pieces and serve.

Mini Popcorn Balls...

 


I always seem to be extremely busy during the Spring months of the year... maybe even more so than the holiday months.

Our PTA Board usually does a fundraiser in March as well as other events the last part of the school year, I've got two birthday parties to plan for in May and June, and to top it off my youngest is making her First Communion in May, so we are busy with that.

Busy, busy, busy.

I know that my girls birthdays aren't for a few more months, but I like to plan in advance. I'm a planner. I'm a list maker. I like to have almost everything done early.

I'm the weirdo who asks her kids what theme party they want as soon as Christmas is over and we're celebrating the New Year.

I gotta order decorations and plan a menu, okay... geesh... don't judge!

Anyway, I love finding easy party treats that take no time to prepare. I've been making these popcorn balls for quite a while now and they are always a big hit. I usually make regular sized ones, but thought it would be fun to change it up a bit and make them mini sized.

I love mixing sprinkles in, but you could totally mix in small candies or nuts. How fun would that be!?!

Mini Popcorn Balls
Slightly Adapted from White Chocolate Popcorn Balls by Gale Gand

  • 1 Bag (3.3 OZ) Microwaveable Popcorn
  • 1 Bag (12 OZ) White Chocolate Morsels
  • 1/3 Cup Sprinkles
Using two generous pieces of cling wrap per pan, loosely line mini muffin pans. This will help the popcorn balls from sticking to the pans. Microwave the popcorn according to the directions, usually 2 minutes for a 3.3 ounce bag. Carefully pour the popped popcorn into a large bowl, making sure to discard any kernels that may not have popped. 

Next, melt the white chocolate morsels over a double boiler or in the microwave (in a few 30 second intervals)  and stir until smooth. Pour over the popcorn and coat well. Add the sprinkles and stir to incorporate them into the popcorn mixture. Spoon the popcorn mixture into each mini muffin mold until you've formed a small ball. Once you are done, transfer the pans to the refrigerator to set, about an hour or so. Serve in mini cupcake liners or clear favor bags tied with a decorative ribbon. Makes 42 mini popcorn balls.

Monster Munch Popcorn Balls...

 


So, who has their kids Halloween costumes yet?

This little lady right here does...

... and I bought them mid-September.

I know, way too early. Let me explain.

If I didn't buy them, there would be the chance that everything would be picked over. Last year I did just that...... waited too long. I have know idea why. I'm the crazy buying Christmas wrap, decor, candy three months too early.

Anyway, because I waited a little longer than I should have last year, it was a complete nightmare to find my then 11 year old a costume. Plus, it is way too costly to have pretty much anything mailed to the island from a costume company.

So, I decided mid-September was as good a time as any to buy them. I'm glad I did. Now I don't have to deal with all the people shopping for a Halloween costume.

A very good thing.

Why?

Because it gave me time to make these sugar loaded beauties.


Monster Munch Popcorn Balls

  • 1 Bag (2.7 Oz.) Microwaveable Popcorn, Light Butter
  • 1 Cup Milk Chocolate Chips
  • 1-1/2 Cups Candy Corn, Plus Some For Garnish
  • 14 Whole Oreo Cookies, Roughly Chopped
  • 1/2 Cup Salted Peanuts, Optional
  • 1/2 Stick Butter
  • 1 Bag (10.5 Oz.) Miniature Marshmallows
Begin by popping your bag of popcorn according to the directions on the box. Then line two cupcake/muffin pans with plastic wrap and set aside. Place your popped popcorn in a very large bowl, making sure to discard any unpopped kernels. Add the chocolate chips, candy corn, chopped Oreos, and peanuts if using; set aside. 

In a medium sized heat proof bowl, melt the butter in the microwave for 45 seconds. Carefully remove the bowl from the microwave and add the marshmallows. Stir to coat, then place the bowl back into the microwave for a few more intervals of 45 seconds until the marshmallows are melted, stirring between each interval. 

Pour the melted marshmallow mixture into the popcorn mixture and with a greased spatula or wooden spoon, stir and coat well. You may need to grease your hands to mix everything evenly. Be very careful not to burn yourself. Next, working quickly, spoon the popcorn mixture into the lined cupcake/muffin pans. Garnish with an extra candy corn. Place in the refrigerator up to 30 minutes to set. Store covered in the refrigerator. Makes 20-24 baseball sized popcorn balls.
